Lend me your ears and your culinary knowledge. Next week I'm making dinner for the girl I recently started to date at her apartment. Now I'm not the best cook by a long shot, and I admit that I may have let my mouth over ride my better judgement (not to mention my ass) in offering to do this for her, but I do want to make a good impression for her. I asked what she may like and she mentioned something with seafood; okay, I know an easy recipe for tilapia over a bed of dirty rice covered in a cream sauce...I'm thinking I may go with that. Along with that maybe shrimp scampi and possibly a side of broccoli?

Do y'all think I'm heading in the right direction here? Any and all opinions are welcomed...

Without a doubt you are in the RIGHT direction!!! This guy I'm somewhat seeing cooked for me our first three dates and I swear I was in love after the first meal. He made me a spinach salad with mangoes and strawberries, risotto and chicken stuffed with goat cheese.

Especially considering she mentioned seafood though, it shows you were listening. And everyone loves a good cook!

Also thought I'd mention that I like you aren't just doing seafood. Definitely adding in some broccoli there sounds like a delicious way to add more variety into the meal so it's less bland.

I know you said you have a delicious recipe already but if I'm ever stuck I always go allrecipes.com and look at the top ones. They're always so yum.

It's almost impossible to fuck up Tilapia and you can buy a bag of mixed vegetables called "California Medley" just in case broccoli isn't her thing that you just nuke steam in the bag, maybe add some Hawaiian rolls and a nice wine... can't get much easier than that. Oh, and maybe a side salad too. :)

Hell yeah that sounds delicious. Shrimp scampi goes great great with broccoli or green beans mmmm.
If she drinks and eats sweets don't forget to woo the fuck out of her with booze and dessert. Bitches love booze and dessert.

Ridiculously awesome dessert. Three ingredients. Coolwhip, coffee, hershey bar.

I thought about green beans but she's mentioned to me that she really loves broccoli, which is great because I make a killer broccoli and cheese soup. I'm so glad you mentioned dessert; is there a rule about what desserts follow seafood? I know it sounds stupid but I'm flying blind here and honestly don't know.

Unfortunately there won't be any wine with dinner. She shares a dorm/apartment with roommates and one of the girls is just barely under the legal, drinking age for the state; because of this they aren't allowed to have alcohol in the dorm and if caught with it can be terminated and sent home. Buuuuuut, if we decide to go out afterward for drinks and something should happen, well, message me your email addy (hint hint, nudge nudge, wink wink) ;)

One of my favourite dishes to cook, which is also pretty easy, is a paella. In fact, I made one the other night, took about 15mins prep time, then not long to actually cook.

I used smoked cod, jumbo prawns, spring onion, sliced lemon, chorizo, ginger and paprika.

Dice the cod into small chunks, and cut the chorizo into strips. Have some rice boiling whilst that's on the go, and by the time you've finished preparing everything else, the rice will be done.

Into a wok (use something appropriate if she doesn't have one) add some olive oil, and warm that through. Add the chorizo only to the oil, and leave this for a couple mins, keeping an eye on it to ensure that it doesn't get too crispy. What you want here is for the juices from the chorizo to start appearing in with the oil.

Add the rice, and stir this in. The juice from the chorizo will give the rice a lot of flavour, as well as edit the colouring. Add the rest of the ingredients, occasionally sprinking and mixing in the paprika and ginger. If you don't use sliced lemon, I'd recommend bottled lemon juice instead, as that will really create a good tang to the mix.

You can cook this for 5-10mins, it doesn't take too long. Keep stirring though, as that will allow the flavours to penetrate the rice, which is the bulk after all.

How you serve is up to you, and really depends on how much you done. I kept everything in the wok, and put placemats down to rest it on, and allowed people to just take however much they wanted. Leaving it in the wok kept it nice and warm after all, whereas if you just piled it onto plates, it would lose heat quickly.

All in all, it's simple to prepare, and surprisingly cheap. I paid around about £12 for everything, so say $20.

Okay here's an update for those that wanna know. We finally got together last Thursday night and Friday was the night she held me to my word about dinner. We went grocery shopping and I bought the ingredients for the dinner: fish (which btw I had to buy a whole bag, you couldn't just purchase a few pieces...WTF is up with that?) shrimp, broccoli, salad, etc. I went with cheese biscuits, surprisingly she'd never had those and liked them. Anyway, I made her dinner at her apartment and it went over well. There was plenty left over and one of her roommates got to eat when she got off work. Okay, so after dinner and dessert (she wanted chocolate pudding, it's what she liked as a child) we went to a bar and had drinks then snuck into one of the parks to see the fireworks. Incidentally, ConnerJay, thumbs up! Drinks and dessert...you should write a book! We wound up at my hotel room and I took her home the next morning and we wound up spending the day together.

All in all, not bad for a rookie chef I suppose...
