Don't they usually get tipped in cash, though? If so, then nobody has to process those payments before they can be distributed.

Some cash, yes, but it's more and more common for people to tip with their card, on the bottom of the receipt, because a lot of people don't carry cash. The person working the register has to count out credit/debit card tips at the end of the server's shift.

and is too much daily payout. you want work? ok you take money end of month only 1 time
or 15 and 30 month. are enouth.

not every month has 30 days. the standard "twice monthly" paycheck is on the 1st and 15th.
