I was going to post this in the models only section, but decided to post it here instead.

I'm trying to get in shape an I'm sure a lot of y'all are as well. Does anybody know any good recipes that are also healthy? I'll start off.

This is one of my favorites. Personally, I like it w/o the tortilla strips. It takes away extra carbs and tastes fine without them.

I like the walmart deli broccoli salad a lot. I found a recipe on the internet that I think is spot on. However once you look at the calories in it you realize how horribly bad it is for you. So I ended up playing with the amounts primarily, switching out the mayo for light mayo, and making it Rice Wine Vinegar instead of plain. The reduced version does taste a little different than the original, but I like it, gives it a little extra kick of flavor. The calories were all just googled. I think it's fairly accurate. All in all it's pretty tasty and at only 194 calories per cup you could literally eat the entire batch in a day and still be on 'diet' amount of calories at under 1400 total.

Oh, and I usually let it sit in the fridge for an hour or two before eating. The flavors all blend a bit.
Just to be honest I quite often cheat from the recipe and cook up 4 slices of bacon. So, play with it accordingly if you really like bacon like me. :shhh:

My favorite healthy recipe right now is quinoa salad. I've been eating this almost every day (and I'm still not sick of it yet lol) and it saves well.

1 cup quinoa
1/2 english cucumber (diced)
1/2 a bag of baby spinach (roughly chopped)
a handful of cherry tomatoes (quartered)
a can of chickpeas (rinsed well)
(sometimes I'll add some green onion and cilantro)

Dressing:
lemon juice (1 lemon) or you can use grapefruit juice
extra virgin olive oil (a few tablespoons)
clove of garlic (finely chopped)
salt, pepper, and onion powder to taste.

One of my favorite things to make is also a quinoa salad! I never measure anything.. but here's what I put in it!

Cooked Quinoa
Kale
Baby Spinach
Pecans (raw, unsalted)
Goat Cheese
Cranberries
Diced Green Apples

Dressing:
Salt & Pepper
Olive Oil
Balsamic Vinaigrette

NOM! AND so healthy :eek:
