If it wasn't obvious I am something of an expert on grills and grilling. Almost went to work for Weber grills a while back, but life made it not an option.
I've had semi-blue rare steak. It's ok. I think I'll stick with just under rare if possible; just enough to melt the fat all the way through and make it mostly safe.
I go for medium rare. I've been growing up being told to eat it that way, so I've been accustomed to its texture. And knowing now that it's the "perfect steak" is an added bonus!
Medium rare, based on this image thing, is just "passed the point of a perfect steak."
But eat it how you like guys. Sure, I have my own opinions of steak, but it's your meal. Granted I'd pretty much think the meat is wasted if you have it done more than medium; I mean, you'd probably get more flavor out of a burger at that point.
Cooked enough to be safe is really not even needed. If you cut off the top layers of steak a raw steak is safe. That's actually how they age steak by just leaving it out for a day. Get it all nice and dried out and whatever they do. Then they just cut away the exposed layers and it's safe. Cook it a bit for certain and once it's browned on the outside it's good to go.

Depending on the cut, rare to medium rare. Whenever I get good sirloin for burgers, I make one or two little raw meatballs with a pinch of salt and a lot of pepper, mmmmm.
