I feel I just HAVE to update you all on the status of my hardboiled egg making abilities. I've finally got the hang of it! I still have a little trouble peeling one or two out of a dozen, but they're delicious and easy for the most part. :thumbleft:

Since I've got that in the bag, I upped my egg making capabilities! Today, I made my first batch ever of Deviled Eggs! This is something that I grew up having as a treat, as it was one of my Mom's specialties for any gathering/party/picnic. (In fact, after I write this, I'm going to call and *squee* at her that I did this, and to top it off, that I'm using her hand-me-down Deviled Egg Tray as seen below.)

Anyways... Jawbs and I have been eating a lot of eggs, meat, fibery veggies, cheeses and whatever protein-filled, carb-less stuff we can get our mouths on these days, so that prompted me to get creative with our eggs. We've been eating a Keto-friendly diet (limiting to about 20g of carbs or less a day, which puts your body in Ketosis and burns fat for energy instead of stored up sugary carbs in your system, to put it in really layman terms. Here's a subreddit if you'd like to investigate further.) I made my first cheesy sauced cauliflower last night. YUM. I've gotta say, I'm in love with the foods we get to eat daily. I :h: cheese and meat. :mrgreen:

I also :h: alcohol, as many of you who chat with me know already. I usually tend to gravitate towards juicy mixed drinks, beer or wine. Avoiding the usual carb intake that I've indulged in, I've modified the way I imbibe as well. Here's a few options that I've started enjoying:

Low sugar/carb Margaritas
(Super big thanks to Jawbs' family member who got us into this recipe!!)
Crystal Light Margarita drink powder (half the packet for 1 blender-full)
1/2 cup Fresh squeezed lime juice
1 to 1 1/2 cups Silver Tequila (Costco has a great Kirkland version of Patron now for ony $18!)
Lots of ice
Blend!

Gin or Vodka and Mandarin or Lemon Lime Soda Water
Over ice!
Sometimes I mix this up with a flavored Stoli. (Please note, flavored vodkas and sweet flavored vodkas are different. Stick to the old-fashioned flavored vodkas that are not sweetened. All the new hype with Cake and Whipped vodka is because they're very sweet and tasty, and are packed with sugar/carbs.)

Adult Lemonade or Punch
Crystal Light Fruit Punch or Pink Lemonade drink mix (generic Walmart brand pictured below)
The powder mix should be made a a slightly more potent strength in order to be super yummy, so add less than 2qts of water
Put a shot or two of vodka over ice, add as much punch/lemonade as you like, to taste.

Aside from enjoying these yummy drinks, I'm challenging myself to drink a LOT more water than I used to. I aim for 2.5 liters a day now. I've always been bad at drinking water. It makes me feel all sloshy, and sometimes nauseous when I drink a bunch at a time. Adding a tea bag or some sort of flavor sometimes helps, but I'm just going for plain ol' straight up water right now. Any liquids I drink in addition to that are bonus. I'm doing great already.

Do you have any fun low carb recipes? Feel free to reply to this with your ideas! Or discuss your favorite ways of healthy eating/drinking. I love to hear about your stuffs! Thanks for reading about mine. ;)

I also love that special tray. Never seen such a thing before. Looks like Tupperware.
I now have a quest .. to find one. :-D

It is Tupperware brand, my mom swore by all things Tupperware. This was probably from the 1980's. :lol: Good luck finding it!
 
They look yummy!

How fresh were the eggs? Some of your eggs appear to have large air sac size. The smaller the air sac the fresher the egg. The test for egg freshness is to put them in water, if they are on the bottom on the side they are fresh, if they sit with the round end pointing up less fresh and if they float, stale.

Ebay, FTW! Not guaranteeing you will find that exact dish, but I've seen tons of "classic" Tupperware on the site ;)
