I'm trying to eat more healthy, and would love to learn more things to cook.

I learned a healthy coffee recipe recently, but it comes with a warning...
"Seriously, try this coffee at your own risk, because it will ruin you for drinking other coffee!" LOL

I can confirm that this is true. I'm now hooked on drinking coffee this way.

Ingredients
1 cup coffee or chai tea
1-3 tablespoons coconut oil
1-2 teaspoons unsalted butter
¼ tsp vanilla
stevia (optional)

Instructions
Put all ingredients in a blender or food processor. Mix on high speed for 20 seconds or until frothy. Drink immediately and enjoy!

Coconut Oil is AWESOME stuff and VERY good for you!
It can help speed weight loss when consumed daily.
Is an immediate source of energy when eaten that isn’t stored as fat.
It’s high Lauric acid and MCFA content helps boost metabolism.
It supports healthy thyroid function.
It can help improve insulin levels.
And there is some evidence that regular ingestion of coconut oil can help prevent or reverse Alzheimers.
 
I have so many but I love crock pot meals.

Chicken Salsa
4 Chicken Breasts
1 jar of your favorite salsa
1 can of drained corn (or 1 frozen bag- cooked)

Throw it all together and let it cook on low for 8 hours or high for 4.
I shred the chicken right before I eat it and then it over brown rice or tortilla chips or in a tortilla. And I add cheese. Ta da! Easy and delicious.
 
I made this today and it was delicious! I just replaced the eggplants with zucchinis, added fresh mozzarella on top and didn't add any coconut sugar.
