Favorite non-leafy-green salad(s)

What do you like when you're not in the mood for a green leafy kinda salad?

Gotta go with macaroni. Love it. Feel the exact opposite about potato. Don't think I've tried the other two you mentioned.

I just take all the stuff you usually put on a salad..carrots, tomatoes, celery,cucumbers and eat those as a salad without the lettuce lol

Chicken Salad.

Quinoa, corn, black beans, tomato, diced zucchini, cilantro is good.

Also good is veggie 'chicken salad' with white beans, a little mayo, diced celery... If you want it to be a curry salad, add curry and raisins. I swear, this is good.

A greek salad without lettuce is good... Tomatoes, cucumbers, red onions, olives, feta... Sometimes adding meat, like ground beef, makes it filling and decadent.

Slice up some mango
Julienne some carrots and jicama
Add shrimp and sliced ham
Mix with some rice wine vinegar, sesame oil and tarragon
Top with crushed red pepper flakes and peanuts

Ok, get a load of this,

Let it sit in the fridge for an hour or so to let the flavors get comfier with each other. It gets even better!

Does parsley count as a leafy green? If not,

Chop up a fuck ton of parsley
Thinly slice up an onion and a couple tomatoes
Put the onion slices into a bowl, pour in a bit of apple cider vinegar, add a glop of honey and some salt. Mix
Add in the parsley, toss with olive oil
Put in the tomatoes, grind on some black pepper. Mix
Done

Bean "salsa" salad. It's three cans of different types if beans (black, kidney, white), 1 chopped onion, 1/2 cup of sugar(or stevia) olive oil and white vinegar. This stuff is like crack and a staple at all of our family events.
